Homemade Instant Cinnamon-Raisin Oatmeal

Homemade Instant Cinnamon-Raisin Oatmeal
I like oatmeal, but don't always have time to make it. I've tried commerically available instant oatmeal, but do not necessarily like the taste. So, I learned to make my own kind from fresh ingredients I have at home. It is fresh-tasting and much less dense and starchy than some of the commercially made instant oatmeal products.

Submitted by: James from Madison, WI
Yield: 1 individual serving

Ingredients

  • 4 tablespoons "quick" oats
  • 1 tablespoon brown sugar ( for variety, try vanilla sugar)
  • 1 teaspoon raisins
  • dash of salt
  • 1-2 walnut pieces, broken, optional
  • 1/2 cup boiling water

Preparation Instructions:

In a plastic sandwich bag or zip-lock “snack” bag, combine all the dry ingredients

Seal each bag and store in a cool, dry place.

When ready to use, place the contents into a cereal bowl and add ½ cup boiling water. Let stand about a minute before it’s ready to eat.

More About This Recipe

Use fresh cinnamon to bring out the flavor, and try different kinds of cinnamon to vary the taste. The Chinese cinnamon is a good starting point, and Ceylon cinnamon is also fine. Saigon or Vietnamese cinnamon has a stronger taste, which I personally like. This can be a good recipe to prepare with children, since they can work as a team to measure the ingredients and assemble each portion. For vegan oatmeal, use beet sugar or evaporated cane sugar instead of brown sugar.
