Baked Stuffed Papaya

Usually I eat papaya plain, but the one I brought home the other day was so firm and big that it was just too perfect for stuffing. I had seen a recipe for baked stuffed papaya, but the filling was barely more than plain ground beef, and with the Spice House to help, I knew it could be so much more interesting!

Ingredients

Preparation Instructions:

Preheat oven to 300 degrees. Peel the papaya, cut it in half lengthwise, and scoop out the seeds. Place in a 9 x 11 baking dish and coat with oil. Dice the onion and mince the garlic or put it through a press. Combine onion, garlic, ground beef, and spices and mix thoroughly. Brown the beef well in a 10" skillet over medium heat, then drain any fat. Spoon the meat mixture into the hollows of the papaya, then bake for 20 minutes.

I haven't had a chance to try this out yet, but I'm willing to bet this Caribbean spice mixture would make for one mean hamburger on the grill.
