Cajun Hen and Sausage Sauce Piquant

Preparation Instructions:
Season your hen with the mixture above. Heat your pot with your desired oil. Once hot, add hen and brown “hard”. Brown the hen until it is a dark golden brown, almost looking burnt, but do not burn it. You want all of the flavors to pour into the pot.
Once browned, remove hen from pot and add the onion, bell pepper and sausage. Brown them until the onions look like half of them are gone. I brown them for about 20 minutes. I also do not like to rush a good thing, just ask anyone I've ever cooked for. I take my time, visit and enjoy the time off of work!
After you have browned everything, throw in the hen and add enough broth to cover the hen, and stir. Turn heat to medium high so it can boil. Add chicken broth periodically to maintain water level. Continue stirring the pot so that the onions and hen will not stick to the bottom, do this until your hen is begging to get out of the pot (tender). At this time, cook some rice according to your rice cooker's instructions. Once the hen is tender, add the tomato powder and stir. Let it cook for about 15 minutes and then your sauce is done.
I usually do green beans and slab bacon on the side. I use half an onion and half a pound of slab bacon. Brown them together for about 20 minutes and then add green beans and some water and let it cook until beans are done.
I hope you enjoy this as much as we did, because it was one of the best seasoning mixtures I've ever used.
